Those familiar with what we do here at East Pole will remember Leonel Chavez. We have had the pleasure of sourcing and serving his coffee for four years now. Hailing from the highlands of Santa Barbara, Leonel prioritizes a bio-dynamic approach to farming, loves to support his neighboring farmers through sharing knowledge and resources, and he loves to watch for birds who live on his farm.
This particular offering is a washed Pacas variety. In the cup, we find an incredibly rich, clean coffee. It is brimming with dark sweetness like you get in dates, figs, molasses, or caramel. And yet, there is also a wonderful and clean complexity that presents as sweet stone fruits, juicy mango, and pear.
