Some of you may remember when we had this Oaxacan coffee back in 2022. We loved it then, and we are thrilled to welcome it back. Our friends from Red Fox Coffee Merchants have done a wonderful job helping to connect roasters like us to communities of farmers in more remote areas. This specific group, Grupo Atitlan Mixe, in the Mixe region of Oaxaca, worked together to grow, dry, and process this wonderful coffee.
We have been dialing this roast in and have been brewing it in the roastery, and we are so excited to have this offering around for the fall and winter season!
When brewed on espresso, we’ve loved pushing the extraction while brewing with a 1:2.5-1:3 ratio. The espresso tastes like baker's chocolate and cranberries, and it is exceptionally smooth. With milk, it is like candied pecans and shortbread.
On filter brewers, we’ve loved the clean, sweet, and complex cup it has produced. It's sweet and clean enough that it can just be that perfect cup of coffee on a crisp fall morning. But, if you want to sit with it and really dig in you’ll find a complex brew that is rich with florality and orchard fruits.
