About the Producer:
This coffee is an Anaerobic Natural processed coffee from Colombia. Juan Gomez, the producer, is part of a long line of coffee farmers in the Huila region. He inherited this farm from his father, and worked to begin implementing regenerative farming practices, believing that these practices would not only be better for the environment but would lead to a thriving ecosystem for the development of excellent coffee.
About the Coffee:
After hand picking the ripe coffee cherries, Gomez and his team ferment the cherries in an anaerobic environment for about 72 hours before removing the coffee seed from the cherry and carefully drying the seeds for about a month before packaging and shipping them out to roasters like us. This process develops a richer body, deeper sweetness, and incredibly unique, lively acidity in the cup.
While it took us a few attempts to get this roast dialed in, we are really pleased with where this coffee ended up! We find it to be incredibly sweet and complex. The acidity is not sour, instead it is reminiscent of a sparkling red wine, effervescent, bubbly, and alive! Have no fear, though, as this is balanced out by a rich, creamy sweetness and body which reminds us of melted strawberry ice cream. It’s balanced and exciting. Cheers!
