This coffee comes from the highland community of Paraiso in Chiapas, one of Mexico’s most expressive coffee-growing regions. Chiapas sits quietly on the southern border, but its cup profiles are anything but understated—cool mountain air, healthy volcanic soils, and smallholder-driven agriculture combine to produce coffees with clarity, sweetness, and an elegance that often surprises first-time drinkers.
Our Paraiso lot is built from the harvests of several families who farm on modest plots between 1,400–1,700 meters. Most rely on traditional varieties like Typica, Bourbon, and Caturra—cultivars that reward careful hands with clean sweetness and balanced structure. Once harvested, the cherries are fully washed and patio-dried, emphasizing transparency and daily-drinkability over flashiness.
In the cup, expect an approachable but memorable sweetness—think honeycrisp apple, nougat, and a gentle citrus lift that keeps everything bright. It’s the kind of coffee that works beautifully across brew methods and rewards both casual sipping and more intentional tasting. As it cools, a soft caramel quality comes forward, reminding us why Chiapas coffees have become a staple for roasters who value consistency and comfort.
